After procuring a candy thermometer, I finally tried my hand at the basic vanilla marshmallow in my newest cookbook, Marshmallow Madness. I must say that the entire book needs a rewrite because no where does it tell you to add the 1/2 cup of "Classic Coating" to the mix. I guessed that myself.
And maybe that's why I'm so unsure about these...
After cooking, whipping, and pouring, the marshmallows require about 6 hours to set before I can play with them. I hope these turn out okay!
